2013A Winter Detox Veggie Broth

And now, for the first post of the year; how about a soft detox?
If you feel like a gentle detox after the celebrations, I have a really nice and tasty recipe for you today. I made a vegetable broth based on the recipe of the physician Henry Bieler. This soup is rich in vitamins and nutrients, and it contributes to regulate the balance between two very important minerals: potassium and sodium.
As per Dr Gerson who developed the Gerson Therapy, the average western diet is loaded with salt and is very poor in potassium. Excess sodium depletes our body of its potassium, leading to imbalances and to diseases such as cancer, diabetes and heart disease.
WHY WE MUST INCREASE OUR POTASSIUM LEVELS:
Potassium improves blood pressure, regulates the body’s acidity /alkaline balance, and plays an important role in the process of using glucose for muscle energy.
In order to increase your potassium levels, reduce the intake of salts (found not only in table salt but also in processed and junk food) and increase your intake of fresh organic fruit, vegetables and whole grains.
So now for the recipe:
- 4 cups filtered water
- 4 zucchini
- 3 celery stalks
- 1 cup green string beans
- 1 large bunch fresh parsley
- 3 tomatoes
- 3 garlic cloves
- 2 onions
- 2 teaspoons dried herbs of your choice (i used rosemary)
Finally chop all the vegetables. Put them in a large pot and add the water. Simmer on a low heat until the veggies are soft (about 20 minutes). Serve warm as it is or blend it. Enjoy!
